Almond Cinnamon Christmas Cookies

It’s been a while since I have written a recipe post and with Christmas just around the corner, the temperature dropping further still I thought it was time I did some baking. There’s no better way to get a sense of hygge or lagom than some good old fashioned baking! It fills the home with warmth and not forgetting the gorgeous aroma of baked goods that makes you feel so good inside.

It took a few tweaks to this recipe to make it work how I wanted it to but I think I finally nailed the ingredients and measurements. If you do try out this recipe do stop by and let me know how it went for you.


INGREDIENTS

  • 1/4 cup Quinoa flour (or gluten free oat flour)

  • 3 /4 cup Almond flour

  • 2 tbsp Coconut palm sugar

  • 2 tbsp Maple syrup

  • 2 tbsp melted Coconut oil

  • 1 tbsp ground Cinnamon

  • 1 tbsp ground Nutmeg

  • 1 tsp Almond extract


METHOD

  • In a bowl combine all the dry ingredients and mix

  • Add the liquid ingredients and mix until you have a dough consistency

  • Preheat the oven to 180 degrees centigrade

  • Roll out the cookie dough on a floured surface

  • cut out your cookies using your desired cookie cutter shape (I used festive reindeer ones)

  • Place your cookies on a baking tray lined with baking paper

  • Bake the cookies for 15 to 20 minutes

  • Remove from the oven and set aside to cool

  • Enjoy your cookies with a lovely warm drink like a festive mulled wine or cider!

In fact, one of the primary ways in which people frequently define “comfort” is in terms of the physical comfort that comes from such things as enjoying soft, pre-heated towels. So buy yourself some high-quality towels and clothes, and enjoy the sensation of just feeling like you’ve wrapped in warm clouds.

If you live alone, or if you and your partner both work, it’s likely that you frequently have to deal with the unpleasant experience of arriving home from work, tired and starving, only to then have to rally the willpower and patience to spend a while preparing dinner. Comforting Yourself / Self Care When Things Are Tough

Sometimes no matter how much things are seemingly going our way, there comes a time when like a lightning bolt it hits you that you feel unsettled, upset or down in some way. This realisation may be because of circumstances beyond our control that have happened to us directly but it can also be because of a reason that we just can’t seem put our finger on. At times it can seem that the weight of the world is on your shoulders and you just don’t care for anything or anyone in that moment, all you would like to do is curl up in a ball and let the world pass you by. There is a little light at the end of the tunnel that you feel you’re falling into, there is something that you can do, what? You may ask, well a little often forgotten ritual called self care or self love. Taking care of yourself is not selfish and is something that you can do not only to feel better about yourself but also to become better placed to interact with and even help your nearest and dearest.

Here is a list of things that you can do when things seem a little tough and you’re spiralling down to that dark place.

1. Allow yourself to feel and take on your feelings wholeheartedly without trying to dissect or analyse them. 

2. Be kind to yourself and use self compassion by talking to yourself like you would a good friend.

3. Make yourself some tea honestly the power of a good cup of tea in this situation is underrated  

4. Get comfortable by putting on some easy, relaxing clothes

5. Put on your headphones and listen to some of your favourite music to lift your mood

6. Get outside and go for a walk in nature without the distraction of technology 

7. Don’t be afraid to ask for help, it may seem like the last thing you want to do but having a roommate, friend or partner do something as small as cooking dinner can make a world of difference. 

8. Indulge in some healthy escapism like watching your favourite shows, movies or even planning a holiday somewhere by pining ideas on Pinterest. 

9. If you read lose yourself in a good book or magazine or blog!

10. Spend the day in bed, not always ideal but if it helps you to recuperate then go for it. 

11. Take a nice relaxing bath or hot shower to soothe you

12. If all else fails do feel free to grab a chunky blanket and curl up under it till you feel better.

5 Simple Ways To Inject Hygge Into Your Everyday Life

Following on from my previous blog post as promised I am sharing five simple ways to start injecting a bit of Hygge into everyday life this season. Hygge as previously explained is a concept of creating a cosiness and a little bit of self love in your everyday experience. 

  1. Introduce a welcoming scent into your immediate environment, this can be done by diffusing some environmentally friendly essential oils or even burning an environmentally safe candle such as one made from coconut wax which is the most environmentally friendly type of candle to burn. Good scents not only make a room smell nice, they also can be good for shifting your mood and make you feel at ease and cosy.
  2. Get warm and cosy, this can be done by wrapping up in a chunky knit blanket, wearing an oversize jumper or cardigan, fluffy socks or sitting in front of a nice roaring fire if you have one with a nice warming beverage like tea or some dairy free hot chocolate.
  3. A little bit of self love goes a long way, so dress your bed space in nice bed wear and sheets, with a cosy throw or blankets and pillows. Wear some nice pyjamas, take a nice long warm bath and treat yourself to some nice bath salts or essential oils while in there. Afterward why not curl up in your nicely dressed bed with a nice warm water bottle while you drift off into a sweet Hyggelig sleep!
  4. Get baking, there's nothing quite like the aroma of freshly baked goods to fill your home with a warm and cosy feel, why not bake some healthy cookies like the one is this previous post. You can have yummy and guilt free treats.
  5. Wrap up warm and go for a walk in nature, take in the simple scenery of the sky, trees and local birds/ wildlife, find some cosy outdoor spots from which to take in nature.
