Three Ingredient Energy Balls

The other day after a rather intense yoga workout I was craving something a little sweet that would satisfy my sweet tooth yet be healthy for me at the same time. As I scoured my kitchen cupboards to find something healthy to eat and finding no luck, I decided that the only way I was going to get something that I wanted was to make it myself. The only thing with this is that I was short on time and needed this energy boosting snack to be quick and easy to make so I managed to get these ingredients together as I already had them in my cupboards. The resulting mix was sweet tooth satisfying, energy boosting, nutritious and healthy too.

 

INGREDIENTS

1 Cup of cashew nuts

1/2 cup of pitted medjool dates

1/2 cup of currants or raisins

1 tsp cinnamon

1tsp nutmeg

1 Tbsp coconut oil

 

METHOD

Place all the ingredients into a food processor

Pulse until all the ingredients form a thick paste consistency

Scoop a little of the mixture up at a time and roll into balls

Set on a plate or tray and place in the fridge for 20 mins to set.

Take the energy balls out and enjoy!
