In my quest to find some more healthy treats to snack on, I decided to make an old childhood favourite snack of mine plantain chips. A plantain is basically like a bigger version of a banana and can be be sweet or savoury depending on how ripe it is when it is cooked. For this recipe I chose a plantain that wasn't too ripe therefore a little bit savoury. It turned out well and the chips can also be stored in an airtight container in a cool dry place for later snack attack episodes!
1 or 2 green plantains
2 tsps pink himalayan salt
1 1/2 Tbsps of melted coconut oil
Preheat the oven to 180 degrees centigrade
Peel the plantain and slice into very thin rounds
Place the thin rounds onto a large baking sheet or tray
sprinkle the plantain with the pink salt followed by the melted coconut oil
bake int the oven until golden brown and crispy
remove from the oven and set aside to cool
enjoy snacking on your simple freshly made batch of plantain chips!
