Currant Cinnamon Almond Cookies

Sometimes all you really want or need is a good old cookie and I was definitely having one of those days lately so I rolled up my sleeves and began the task of baking this simple yet nutritious cookie recipe. The resulting cookies are grain free, carb free, dairy free and refined sugar free and included good fats the body needs which means they not only satisfied my cookie craving but were guilt free too. INGREDIENTS

1 and a half cups of Almond flour / Almond meal

1 Tbsp Coconut sugar 

2 and a half Tbsp melted coconut oil

1 tsp ground cinnamon

1/2 tsp ground nutmeg

3 Tbsp currants or raisins

1 Tbsp Almond milk

 

METHOD

Preheat the oven to 150 C 

in a bowl combine the almond flour, nutmeg, cinnamon and raisins an mix 

In a separate bowl place the warm melted coconut oil and add the coconut sugar to it

Once the coconut sugar has melted in the coconut oil add to the bowl containing the dry ingredients and mix together

the consistency of the mix should resemble cookie dough, add the almond milk if more moisture is needed

Form tablespoon sized balls you should have between 9 and 12 cookies and place these on a lined baking sheet or tray

Bake the cookies for 15 to 20 minutes or until golden brown

reove the cookies form the oven once done and set aside on a wire rack or plate to cool.

Once cool grab a couple and pour yourself a glass of your favourite drink and enjoy!
