Berry Cherry Coconut Smoothie

I do love a good smoothie and just the other day I couldn't help but rustle up another seasonal berry one with some added coconut yoghurt resulting in a sort of parfait I guess. It is super simple and quick to make. It has the added benefit of some added plant protein powder for any additional nutritional needs especially if this is being consumed after physical activity.

 

INGREDIENTS

1 Banana

1 Apple

A handful of fresh spinach leaves

1 cup of frozen mixed seasonal berries

3 to 4 fresh ripe cherries

2 Tbsp plant protein powder

1/2 cup almond milk

1/2 tsp cinnamon

2 to 3 Tbsp dairy free coconut yoghurt

1/2 tsp vanilla extract / fresh vanilla (optional)

 

METHOD

Wash and chop all the fruit apart from the fresh cherries and add to the blender / food processor

Add the spinach leaves, plant protein and cinnamon

Finally add the almond milk and top up with a small amount of filtered water if necessary

Add the vanilla (optional)

Blend until you get a smooth and creamy consistency

Transfer the smoothie into a container of choice and top with 2 to 3 Tbsp of dairy free coconut yoghurt

Garnish with some fresh ripe cherries, grab a spoon and tuck in!
