There's nothing quite like something zesty to lift your spirits on a dull grey winter's day. This was exactly the thinking that was behind this latest creation, I wanted something that would be tasty and zesty to help put a spring in my proverbial step! I also was looking for something that I could also incorporate as many beneficial nutrients as possible as I was having this parfait after a session of light restorative yoga.
1 stick of celery
1 inch of fresh stem ginger
A handful of spinach (fresh or frozen)
2 Tbsp plant protein powder
250ml Filtered water
2 Tbsp Chia seeds
250ml Almond milk (or other non dairy milk)
1 tsp Low GI sweetener like maple syrup, coconut nectar (optional)
Add the almond milk to the chia seeds followed by the sweetener (optional)
place in the fridge for 30 minutes or until it sets into a thick pudding consistency.
Wash and chop all the fruit, celery and spinach and add to the food processor / blender
Add the filtered water and the juice of half a lime and blend until smooth and set aside
Add your smoothie to the already set chia pudding and this creates a two layer parfait.
Grab a spoon and tuck into the zesty parfait goodness!
