No Bake Carob Energy Bars

It has been a bit of a hectic week for me and with pushing myself in so many directions and looking after a poorly little one, sometimes it becomes hard to remember to stop take some time out and restore your depleting energy levels. I decided to make some no bake energy bars great for snacking on they are free from unnecessary additives, full of protein and nutrients and a great option to reach for when you fancy something quick and healthy to snack on. 

 

INGREDIENTS

6 to 8 large pitted Medjool dates

One handful of of Brazil nuts

1 cup of dried fruit of choice

1 Tbsp coconut oil

A pinch of sea salt

1 and a half tsp ground cinnamon

1 tsp ground nutmeg

 

CAROB TOPPING

2 Tbsp Carob powder

4 Tbsp melted coconut oil

1 Tbsp coconut nectar (or sweetener of choice)

2 Tbsp unsweetened shredded coconut

 

METHOD

Soak the Brazil nuts in some filtered water for a few hours although overnight is best

drain the water from th brazil nuts and add to the food processor

add the dates, dried fruit, coconut oil, cinnamon nutmeg and salt 

Pulse the mixture in the food processor to break it down and stop when a smooth consistency is achieved

Remove the mixture and place into a previously greased with coconut oil dish 

Flatten the mixture into the dish as much as possible, cover it and place in the fridge to set

CAROB TOPPING

Combine all the ingredients for the carob topping except the shredded coconut in a bowl and mix until smooth 

Pour the mixture on top of the energy bar mix, sprinkle the coconut on top and set it back in the fridge to set.

Once the carob has set, remove the dish from the fridge, slice into bars of equal sections and they're ready to eat!
