With the spring sun shining and summer around the corner, it's time to conjure up some fresh fruity goodness. There is nothing more refreshing than having a cooling snack on a warm sunny day. Enter nicecream! no it isn't a typo, it is simply ice cream made out of frozen bananas as the base, nice, cool and fresh with all of the goodness and none of the guilt that comes with regular ice cream. I added some Maqui berry extract for an antioxidant and anti-inflammatory boost as well as some seasonal berries.I hope you enjoy it as much as I did. 2 Frozen chopped bananas
1/2 cup of almond milk
1/2 teaspoon ground cinnamon
2 capsules of Maqui berry powder
A handful of frozen seasonal berries
1 Teaspoon low GI sweetener of choice (This is optional; I used carob syrup)
Add the almond milk to the blender / food processor
Next add the frozen bananas, frozen mixed berries followed by the maqui berry powder and cinnamon
Finally add your low GI sweetener of choice (optional)
Pulse the fruit to begin with, taking breaks to scrape any fruit stuck to the sides
after the mixture becomes softer, start to blend the mix until a creamy ice cream like consistency is achieved.
Transfer the mix into a container of choice or even an ice cream cone
Top with edible lavender and enjoy till your heart's content, guilt free.
