There is nothing I love to do more on a dull miserable day than create something that is cheerful and nourishing. This time I chose to create a lovely and refreshing raspberry parfait which really hit the spot as a post workout replenishment, I have to say it was layer upon layer of delicious goodness.
1 large ripe banana
1 passion fruit
1 cup of raspberries ( Fresh or frozen)
1/2 tsp ground cinnamon
100 ml coconut milk
200 ml filtered water

3 Tbsp coconut or dairy free yoghurt
Wash and chop all the fruit except passion fruit and raspberries into medium sized sections.
Add the chopped fruit to the food processor or blender
Add the raspberries (keep some left over to garnish with)
Add the coconut milk and filtered water followed by the ground cinnamon.
Blend the whole mixture until smooth
Transfer the smoothie to a glass / container of choice

Place some coconut yoghurt on top followed by the left over raspberries
Finally halve the passion fruit and scoop out the yummy fruit,
put this on top of the raspberries and you have yourself a perfect parfait.
